The big danger for corrosion with steel/alu interfaces is where raw metal 
is in contact with raw metal, the most common being a plain aluminum 
seatpost in a steel seattube, the inside of the frame not being painted.  
Quill stems, too.  

All of the Nitto steel handlebars are plated (I think nickel plated), so 
you'd never have raw chromoly-on-aluminum contact there.  A lot of aluminum 
stems are anodized or painted (but maybe not Nitto? I'm not sure), further 
preventing problematic contact.  I'd never grease a handlebar/stem 
interface, but that may just be me, since making sure the handlebar stays 
in place seems more important to me.  Especially with a high-leverage bar 
like an Albatross, where rotating in the stem can be a problem.

Like Joe says, if you're concerned, loosening everything once in a while 
and giving it a wiggle isn't a bad idea.
