I'll let you know when I take delivery of my Rambler later this month ;-) Seriously, of course I "could." But since I don't have to, I won't. Some aspect of my bike joy would suffer, whether it's loaded touring, zippy century rides, or long days on single track. There just isn't a bike that does all that, and I'm fine with that. Just like I can't do everything in the kitchen with one knife, nor do I want to.
