The opinels are great for sure. Tons of bang for the buck. I have a couple other inexpensive knives that have proven surprisingly hearty and get tons use. I've had several examples of both and all have been found at thrift stores and garage sales but are readily available for 20-30 bucks.
Douk Douk are similar to opinel being French and thin carbon blade, but have metal scales. They have a super thin profile so are easy to carry in a pocket. No lock though and have recently caught the eye of "lifestyle" purveyors which is up to the viewer to be deemed good or bad. British military knives by Sheffield are also fantastic. They are a bit more rugged and have stainless blades. A couple versions are made in 2 and 3 tool configurations. I prefer the 2 blade without the marlin spike.
