I know -- my problem is that I like building them almost as much as I like 
riding them.  The answer is that I ride them pretty much seriatim -- one for a 
few weeks, then another for a few weeks -- except where the particular ride 
requires something the "current" bike doesn't provide.  So, for example, the 
only "fast" (speaking relatively, of course, given the aging motor) geared bike 
I have is my Hilsen, so that's what I ride when I try to keep up with the 
fastboys from time to time.  Self-supported touring usually gets the 
Rohloff-equipped Bomba or the Atlantis.  But I can commute, or shop, or weekend 
tour, on almost all of the bikes, and I clearly have way more bikes than any 
reasonable person "needs", with an awful lot of overlap.

There are, however, worse addictions (or mid-life crises), as my wife 
cheerfully acknowledges.
