Squash Soufflé

The Textbook of Louisiana Cuisine



INGREDIENTS:
6 medium white squash
2 slices French bread
1/2 cup milk
1 egg
1 small bunch green onions, chopped
Salt to taste
Pepper to taste
Bread crumbs
TO PREPARE:

     Peel and cut squash in medium sized pieces.  Boil in unsalted water until tender.  Drain and mash well.  Soak two large pieces of French bread in milk.  When well soaked, blend into the squash.  Add one egg and beat well into the mixture.  Add onions, salt and pepper to taste.  Bake in greased casserole for 35 minutes at 350 degrees.  Sprinkle with bread crumbs and dots of butter before baking if desired.
