Appetizers,
Salads and Breads:
Creamy
Avocado Mold
from
the Houston Junior
League Cookbook
INGREDIENTS:
1-1/2
envelopes unflavored gelatin
1
cup cold water
3/4
cup boiling water
2
tablespoons lemon juice
1-1/4
teaspoons salt
1
teaspoon grated onion
2
or more dashes Tabasco
2-1/2
cups mashed ripe avocado
1
cup sour cream
1
cup mayonnaise
TO
PREPARE:
Soften gelatin in cold water;
dissolve in boiling water. Add lemon juice, salt, onion and Tabasco.
Let cool to room temperature. Stir in avocado, sour cream and mayonnaise.
Pour into a 6-cup ring mold. Chill until firm (5 to 6 hours or overnight).
