Soups and Vegetables:
Glazed Carrots

from Atlanta Cooknotes


INGREDIENTS:
1 medium bunch carrots, peeled
1/4 to 1/2 cup margarine
1/3 cup firmly packed brown sugar
1 teaspoon nutmeg
3 to 4 tablespoons fresh orange juice
TO PREPARE:

Slice carrots diagonally.  Steam slightly or until tender but firm.  Sauté in margarine; add brown sugar, nutmeg, and orange juice.  Cook and stir until brown sugar melts and carrots are glazed.  Serve immediately.
