Recipes Handed Down from Generation to Generation INGREDIENTS: 3 eggs 3 tablespoons flour 1 tablespoon sugar 6 tablespoons milk Juice of 1/2 lemon 3 tablespoons sugar 1/4 teaspoon cinnamon 1/4 cup melted butter Powdered sugar TO PREPARE: Beat eggs until thick; add flour, sugar and milk.  Pour into large, buttered skillet.  Bake uncovered for 8 minutes at 425 degrees; reduce heat to 375 degrees; bake for 8 more minutes.  Put pancake on platter; sprinkle with lemon juice, sugar, cinnamon, and butter.  Roll it up; sprinkle with powdered sugar.  Serve with homemade applesauce if possible.
