Marinated Mushrooms

INGREDIENTS:
1
pound fresh mushrooms
4
tablespoons olive oil
1
tablespoon lemon juice
1
large onion, sliced
1
clove garlic, minced
1/4
teaspoon thyme
1/4
teaspoon marjoram
1/4
teaspoon oregano
1
bay leaf
1
cup peeled and chopped tomatoes
1/3
cup wine vinegar
Dash
sugar
Salt,
pepper and hot pepper sauce to taste
TO
PREPARE:
1.
Sauté mushrooms in 2 tablespoons olive oil until golden. Transfer
to bowl and toss with lemon juice.
2.
In remaining 2 tablespoons olive oil, sauté onions and garlic.
Add remaining ingredients, including a little juice if canned tomatoes
are used. Bring to a boil and simmer 15 minutes.
3.
Pour marinade over mushrooms; cover tightly, and refrigerate overnight.
YIELD:
6 to 8 servings
