Pork Barbecue

Your Service

INGREDIENTS:
1
(5-pound) bone-in pork loin roast
1
medium onion, sliced, separated into rings
1
or 2 garlic cloves, sliced
3
or 4 whole garlic cloves
2
cups Barbecue Sauce (see below)
1
teaspoon lemon juice
2
Tablespoons red wine vinegar
Tabasco sauce to taste
TO
PREPARE:
Place
the pork in a slow cooker. Top with the onion, sliced garlic and
whole garlic cloves. Do not add any liquid. Cook on High for
5 hours or until the pork pulls apart easily. Remove to a platter
to cool. Pull the pork apart and place in a large skillet or Dutch
oven. Add the Barbecue Sauce, lemon juice, red wine vinegar and Tabasco
sauce. Cook over medium heat until bubbly.

for Barbecue Sauce:

cup packed brown sugar
1/4
cup vinegar
1/4
cup Worcestershire sauce
1
cup ketchup
2
cups water
1
teaspoon dry mustard
1
teaspoon chili powder
Tabasco sauce to taste
Salt to taste
TO
PREPARE Barbecue Sauce:
Combine
the brown sugar, vinegar, Worcestershire sauce, ketchup, water, dry mustard,
chili powder, Tabasco sauce and salt in a saucepan. Bring to a boil
over medium heat. Remove from the heat. Use as a sauce or as
a baste for meat.
YIELDS:
2-1/2 cups
