Ok I tested it and it's working as you said - on the backup server all 
files have ownership 'backup:backup' but if I restore the files on the 
source hosts they got "automagically" back their original ownership :)

And thanks Remi as well for your very sophisticated answer - but your 
solution scared me even more and I'll stick with the simple way I've set 
it up at the moment ;-)
