Outlook has manual processes equivalent to exporting the data and saving
to a file.
Exchange varies with the release/version. The MS Server backup routines
supply support for some versions. Other versions have internal data
recovery processes that are not file backup oriented.
Maintaining an Exchange server is really a topic for Microsoft training
and support.
