We use a Verizon Jet Pack for our internet. It wants to have its battery
charged and then be unplugged, like any cell phone. Is there a variety
that can be left plugged in? Charging could be set up to be intermittent
with a timer switch.

I'll vouch that the Victron solution works great. You need a GSM carrier, TMobile works as well as others, AT&T for one. The GSM piece is important, Verizon won't work with this.
Another approach is to do a Mifi box with Verizon, then just use it as a wireless hotspot like any WiFi network.
No problems with the single Victron that we have out there.
