Awe yes. 

Well then. To properly measure a close system like that, you would need:

A separaty derived measurement/power system. 
1. Voltage and current sensors parallel to the Grundfos pump controller. 
2. Solar and battery separate from the water well.
3. See if a Bull Horn RMU can be adapted for use with the voltage and current sensors that drive the Grundfos. A voltage tap of the incoming solar and a shunt measuring the current from said solar array. 
4. Might also propose a water meter that has digital accumulation of water produced. 

I have worked with this company for produced oil, gas and cathodic protection.

The best way might be to add a water meter and then back calculate the supposed energy needed. 

They know the water volume, head and flow rate. BAM!: Math!!

Offgrid, no cell.  Its doesn’t need to be real time, can be just monthly totals.

I don’t know where to even look for something like this.
