I haven't seen disappearing text; how do you reproduce that? What's inconsistent about the behavior?

That depends on what you're used to, I suppose. True, the customization dialog is not the standard OS X one, but it's pretty similar to what's commonly used on Windows and Linux. In a cross-platform product, each feature has to be carefully chosen in a way that will work well for all users; you can't expect your favorite OS to win every time there is disagreement among platforms. This is a case where, in my opinion, the standard OS X GUI isn't as clear or efficient as one more like what Windows and Linux use.
And yes, I've reported the appropriate issues in the feedback system.
That's good; if they are bugs, they should be fixed. But sweeping generalities like:
Custom toolbars just don't cut it on Mac OS X.
suggest to me simple prejudice rather than actual problems. Not that prejudices aren't important too; you just can't expect everyone to share the same ones you have.
