Combined with text drawn into a canvas, I got good results using a
mask for reflectivity.
It is not perfect, but I was trying to achieve a 'glossy LED display'
on a project once... and using a canvas worked well... I drew into
the background layer the text I wanted, then added a mask to it...
the effect was not bad.... the link has PNGs so you can copy it if
you want to try it.. the 'reflection highlight' is the top pic
(obviously) though I am not sure if the background is supposed to be
black or white... it has been awhile since I tried it and I don't
remember what worked better...
With the three examples, you can see how the change in the gradient
of the mask had an effect on the quality of the effect. One could
certainly experiment with different masking gradients.

I think what I'm really looking for is a combination of ideas here.
I'd like to render one image as the background and like Joe said, the
knob shadows will remain realistic, since shadows don't change as you
rotate. Then, I'd like a small indicator like Phil mentioned that
does the actual rotation.
I don't believe anyone has mentioned this, but perhaps a little bit
of picture layering might help you.
Specifically, you could add a masked picture of a shadow on top of
the knob art itself. This way, even details such as position
indicator dots will fall into shadow as the knob is rotated (if the
dots are on the knob, that is).
So this adds one static shadow art plus however you decide to do
the knob art, which I feel is easier to maintain should things
change. If you're really clever, the shadow art can even include
static highlights.
