I quickly browsed the book refactoring to patterns http://www.industriallogic.com/xp/refactoring/ and I think they had an interesting discussion of how to structure a WYSIWYG editor. I am not sure if they had a discussion of the optimal way to store data while the program is running but you would need to read the chapter for more detail. I hope it can be of some help to you.
