A mask in this case is like a template which the user input must follow. For example, a U.S. Social Security Number (3 digits, 2 digits, 4 digits separated by dashes: ex: 123-45-6789) might be entered into an EditField with a mask set to ###-##-####. It's just a way to control user input.

For your real life "mask" analogy, consider "masking" in the printing sense, rather than in the "hiding your identity" sense. "Filter" might be a good word here, too.
