Well, I've finally got it working, but it required me
stumbling across this page:

The bottom post - the one about the x11vnc bit is the one that really
got things going as it was dead simple after installing that rpm on
my linux box - I could just connect to my 'puter using Chicken of
the VNC just as I would in windows with no problems whatsoever!
Just thought I'd share that link in case others are experiencing
similar problems with VNCing to linux from OS X.
