The first menu bar, or System font was Chicago.
Although retaining Chicago, System 7.5 introduced Espy as the font
for Newton and Apple's eWorld online service. Screen shots of the ill
fated Copland OS (also known as OS 8 at times) showed Espy as the
system font. This is a terrificly readable screen font.
When Mac OS 8 actually shipped, it had only a few of the Copland
features and used Charcoal as system font, a sort of cross between
Chicago and Espy, rather than Espy itself.
All versions of OS X have used Lucida Grande as the standard default
system font.
