This even works if you double click the desired project file in the Finder WHILE RB is opening. This allows you to first select the desired version of RB, launch it, and then double click the project you want to work on. You wind up with your project open and no default project to deal with.

Or drag the project icon on the icon (in the dock?) of the version of Rb. This works even if you have different version of Rb open already.
