Hi Giovanni -
There is no code signing of applications under OS X like on Windows.
However, one method would be to provide an md5 sum for your
application package and store that on your site for folks to compare
against. This is the way most Unix systems validate that a package
hasn't been compromised.
Create the zip'd Package or DMG for your application
Copy that to your Desktop
In the Terminal execute:
cd ~/Desktop
md5 my_application.zip
You'll get back a return that looks like this:
MD5 (my_application.zip) = a6135256e2cc9165e30a9a100736198f
The receiver can then run a manual md5 on the package that they
download and verify that key against your published key.
Of course, there are other options (PGP, etc.), but md5 does a great
job and covers large sized files (i.e.: a DVD image) very safely.
