Running an OS and running an OS optimally are two different things in any 
platform.

Most windows os's will run on a low end machines. As it is the case for   OSX.

The question is will it run optimally.

There are many benefits on moving on to the new hardware but you dont have to.

I know people that run xp on 486s.

I personally think that for simple applications, there wont be a reason to 
upgrade, but if you want the bells and whittles, then you have to be willing to 
upgrade.

This is generally true on any platform.

I still have my 1 GHz 17" PowerBook, model A, 3+ years, works like a  
charm, and will run 10.5 as soon as it is available.  My 1.4 GHz  
Mini, 2 years is also running, so I don't see your point.  Well  
actually I do see one of your points, I am buying more macs, but I  
keep on using them.
