I have 2 Beige 300 Mhz G3s, 1 Mac Mini and 1 eMac (both 1.25 GHz PPC G4) and 1 MacBook. Based on what Chris and Terry wrote, it seems it is a problem installing an older OS than what shipped with the computer. The eMac shipped with 10.3.3 and running the Jaguar installation CD just reboots into Panther.
If you have one, simply partition your new drive when you boot from the CD into 5 partitions (save one for 10.5) by choosing Disk Utility from the Installer menu, making sure you choose a HFS+ Non journaled File System.
Mmm. I partitioned using a Mac OS Extended journaled format yesterday and I don't think I can see a HFS+ option, only Mac OS Extended. Is this the same and what difference does it make? Looking at the partition options in Panther, I also see Unix File System and Free Space but not HFS+.
Boot from you 10.1 CD and install it onto the first partition, and repeat for all OS X versions until 10.4 (or 10.5 if you're a seeded developer).
The 10.1 and 10.2 CDs are currently being ignored/bypassed on reboot.
