I can think of an application that can uninstall itself. When choosing a "Uninstall me" menu item, the application deletes every support file and then, for example, moves the application file to the trash (or to the temporary folder which gets deleted on next launch).
So even an uninstaller seems not needed, in my opinion.

Even that, in my opinion, is not always a reason for using an installer. Most modern OS X apps are pretty smart meanwhile, installing any support files (for example, stuff that goes into Application Support) on first launch - sometimes out of their own bundle.

Even launching special background processes or adding StartupItems can often be done out of the running app.

The only useful thing an installer can don is, IMHO, offering aa "clean uninstall" option - but only wher it makes sense.

Anyway, using an installer is not the most wanted method for a Mac user, unless you have to copy special files to special folders.
