Multiple video cards I know little about but multiple audio cards is a
tricky beast that cannot be done with regular-quality cards (at least not
in any stable means I've ever seen)...so SoundBlasters are out.

The easiest solution is probably buying a GadgetLabs Wave8 ($500 or so)
which has 8 inputs/outputs and can do balanced or unbalanced.  That might
be overkill if you plan to simply use two encoders per box.  LynxONE
(lynxstudio.com) cards are good cards that handle two ins/outs (in analog
at least) and can be synced to other LynxONEs and also to various video
capture cards as well.  They run about $500 ea. as well I think.
