I haven't been able to change sources while still encoding using the Osprey
card, but there is an external solution. JVC does two AV selectors, the
JX-S300 (4 ins/3 outs) and JX-S700 (7 ins/4 outs) that can be used to select
your video feeds. In addition, both selector boxes have inputs for timer
operation.

I intend using them to feed video from live cameras in separate radio
studios, depending on which one is on air. I looked at a software solution
but it would have put extra load on the PCs and prevented manual overrides
by less technically minded staff. An external box keeps the video switching
separate from the encoding (I hate having one critical point of failure) and
allows manual overrides should they be necessary.

Of course, you could get carried away and write a Java app to do the
switching with a web front end for manual overrides and schedule updating,
but the mechanical solution is simpler!
