I would certainly recommend Adobe Premiere for capturing and
post-production. There are other programs that may be less costly. You can
edit the captured video and readjust audio and video synch for instance, or
change the contrast and adjust size before encoding.
As far as a good learning tool, RM's RealProducer G2 Authoring Kit is a good
place to start. You'll find it at
http://www.realnetworks.com/products/authkit/index.html . It's fairly
basic, but gives good advice.
