Cherry Latkes Makes 16 to 18 1 cup flour 1/2 teaspoon baking powder 2 eggs 4 tablespoons milk 1 teaspoon almond extract 1 cup canned cherry pie filling oil Mix flour and baking powder. Make a well in the center and add eggs, milk and almond extract. Mix well. stir in cherry pie filling. Heat 1/8 oil in a large nonstick skillet over medium-high heat until a drop of pie filling mixture sizzles. Gently drop rounded tablespoonfuls into hot oil being careful not to crowd. Cook 3 to 4 minutes a side until crisp and browned.
