Carolina Delights Easy No Bake Cookies Easy No Bake Cookies Eskimo Cookies No Bake Cookies No Bake Cookies Mama's No Bake Chocolate Cookies Chocolate Clusters (No-Bake) No-Bake Apricot Snowballs Carolina Delights 2 Cup sugar 1/2 Cup milk 1/4 Cup cocoa 1/2 Cup butter 1 teaspoon vanilla extract 1/2 Cup peanut butter 3 Cup quick cooking oats In a saucepan combine the sugar, milk, cocoa, and margarine. Cook over med. high heat, stirring constantly, bring mixture to a boil and boil for 1 minute. Remove from the heat and stir in the vanilla, peanut butter, and quick cooking oats. Drop spoonfuls of batter onto sheets of greased waxed paper. Let cool. Store cookies in an airtight container. Makes: 5 dozen Easy No Bake Cookies 2 Cup sugar 3/4 Cup butter 2/3 Cup milk 1 (4 serving size) box instant pudding, any flavor 3 1/2 Cup quick cooking oats 1/2 teaspoon vanilla extract Mix together the sugar, butter or margarine and the milk in a lg. pot and bring to a boil. Boil for 2 minutes. Turn off heat and add in the pudding, oats and vanilla. Mix well and let stand for 5 minutes. Drop by spoonfuls onto waxed paper. Makes: 3-4 dozen Eskimo Cookies 3/4 Cup butter 3/4 Cup sugar 3 Tablespoon cocoa 1/2 teaspoon vanilla extract 1 Tablespoon water 2 Cup rolled oats powdered sugar Soften butter and beat well. Add sugar and mix well. Add cocoa, vanilla and water. Then add oatmeal. Shape into 36 balls and roll in powdered sugar. Keep in refrigerator. Makes: 3 dozen Fudge Quickies 2 Cup sugar 2 Cup packed brown sugar 1 Cup butter 1 Cup milk 2 Cup semi-sweet chocolate chips 4 Cup quick cooking oats 1 Cup chopped nuts 1 Cup flaked coconut Place oats, nuts, coconut, and chips in a large bowl. Place sugars, butter or margarine, and milk in a saucepan. Bring to a boil, and continue to boil for 2 minutes. Pour hot mixture over oat mixture. Mix well. Drop from a teaspoon onto waxed paper. Allow to set up. Makes: 8 dozen No Bake Cookies 1 3/4 Cup sugar 1/2 Cup milk 1/2 Cup butter 4 Tablespoon cocoa 1/2 C. crunchy peanut butter 3 Cup quick cooking oats 1 teaspoon vanilla extract Boil together sugar, milk, butter and cocoa for 1 1/2 minutes. (Start timing when mixture reaches a full rolling boil. This is the trick to successful cookies. If you boil too long the cookies will be dry and crumbly. If you don't boil long enough, cookies won't form properly.) Remove from heat and add peanut butter, oats and vanilla. Stir until well blended. Drop by teaspoons onto waxed paper. Let cool until hardened. Makes: 3 dozen No Bake Cookies 6 ounces semi-sweet chocolate chips 1/3 Cup butter 16 large marshmallows 1/3 Cup smooth peanut butter 1/2 teaspoon vanilla extract 1 Cup flaked coconut 2 Cup rolled oats In the top half of a double boiler over low heat melt chocolate chips, butter and marshmallows. Stir until smooth and remove from heat. Stir in peanut butter, vanilla, coconut and oats. Mix thoroughly. Drop by rounded spoonfuls onto waxed paper. Refrigerate for about 30 minutes. Makes: 2-3 dozen Mama's No Bake Chocolate Cookies 2 Cup sugar 1/2 Cup unsweetened cocoa 1/2 Cup butter 1/2 Cup milk 4 Cup quick cooking oats or 3 Cup quick cooking oats and 1 Cup flake coconut Boil sugar, cocoa, butter and milk for 1 1/2 minutes stirring constantly. Remove from heat. Add oats. Mix well. Drop by spoonfuls onto waxed paper. Let set up. Makes: 3 dozen Chocolate Clusters (No-Bake) 6 ounces semi-sweet chocolate chips 3/4 Cup sweetened condensed milk 2 Cup dry unsweetened cereal Melt chips. Stir in milk. Stir in cereal, making sure that chocolate mixture evenly coats cereal pieces. Drop mixture by teaspoonfuls onto a sheet of foil and let clusters harden. Makes: 30 No-Bake Apricot Snowballs 2 Cup flaked coconut 1 1/2 Cup dried apricots 1 Cup golden raisins 1/3 Cup orange juice 3 Tablespoon grated orange peel 1 1/2 Cup coarsely chopped blanched almonds, toasted powdered sugar In a food processor or blender, combine first five ingredients. Cover and process until mixture is finely chopped and well blended. Stir in almonds. Roll into 1 inch balls, then roll in powdered sugar. Let dry on racks for about 1 hour.
