Yakhnit Lobia (Yakhnit Lobia)

For 4 people

     2.5 lbs. Green beans, cut up (cleaned and drained from water)
     1/2 lb.  Lean veal meat, cut in 1/2 inch cubes (Turkey
              Schnitzel works)
     1/2 lb or more. Tomatoes, peeled, seeded and chopped
              or 3 tabs tomato paste.
     3/4 cup chopped onions
     2   tsp  cinnamon
     Salt, pepper (to taste)

Fry the meat and onions until in a fat sprayed non-stick frying
pan. (I microwave the onions first for speed and use a Misto sprayer
with olive oil). Add the seasoning, then the green beans and fry 5
minutes longer.
Transfer to another pot and add the tomato paste or tomatoes with enough
water to cover. Cover the pan and cook on a medium high heat until is
done and sauce is thick (about one hour).
Serve with rice or couscous. (Incidentally, if you are using rice, the
very simplest way to cook it is to emulate the Japanese and use an
automatic rice cooker. I am still using the one we bought about 30 years
ago.)

Green beans (Lobia), besides being low in calories, have fiber in skin
which gives bulk and filling.
