Cinnamon Muffins

3/4 cup butter
3/4 cup + 1/3 cup granulated sugar
1 tsp. vanilla
2 eggs
1 3/4 cup flour
1 tsp. baking. soda
1 tsp. baking. powder
pinch salt
1 cup sour cream
milk (opt.)
1/4 -1/2 cup chop. walnuts
3 tsp. cinnamon

Heat oven 375 deg.  In a large. bowl, using electric mixer, cream softened
butter and 3/4 cup sugar.  Blend in vanilla and eggs.  In another bowl,
sift together flour, baking powder, baking soda, and salt.  Pour flour mixture
and sour cream into butter mixture.  Stir batter by hand until ingredients. are
blended.  (If too dry, add splash of milk)  Grease muffin tins.  To
prepare the topping:  In clean bowl, mix together the walnuts, cinnamon
and remaining 1/3 cup sugar.  Drop 1 Tbsp  batter into each cup of muffin
tin.  Sprinkle each with 1 tsp. topping.  Top with 1 more Tbsp  batter.
Sprinkle tops with another tsp. of topping.  Bake 15-20 min. or until
tester comes out clean.  Makes 12 muffins.
