Honey Mint Carrots

Servings: 6 servings

6 medium carrots, scrubbed well
1 tablespoon honey
2 tablespoons fresh mint, chopped, or 1 teaspoon dried mint leaves

Heat 1 inch water to boiling in 12-inch skillet. Add carrots and reheat
until water boils. Reduce heat; cover skillet and simmer mixture for 10
minutes or until tender-crisp. Drain carrots well and toss with honey and
mint.
