Asparagus does not usually freeze well, but it is important to blanch it very
quickly before you freeze it.

Blanching Asparagus.

Place the asparagus in rapidly boiling water for about one minute.  Remove and
immediately plunge into icy cold water.. Drain and freeze quickly.


When it is thawed, if can be used for Cream of Asparagus soup.  Normal chicken
stock base, thickened with flour, with milk or cream according to preference.
Then chop the thawed asparagus and cook it in the soup. Finally puree the soup
in the blender.

Another possiblity is to steam the thawed asparagus to complete the cooking and
then chop it up and put it in an omelet -- it dooesn't seem  to matter that it
is a bit mushy when it's in an omelet.
