In a bowl combine seafood. mayonnaise. catchup. lemon juice, Worcesershire, petit pois, salt, pepper. Peel avocados divide lengthwise and sprinke with a dash of lemon juice. Fill stuffing in that cavity. Garnish with chopped chives and red pepper. Cochitas a la Parmesana Sea Shell with Parmesan Cheese This is very simple and delicious. 4 portions 12 Bivalve shellfish (such as clams or oysters) butter salt pepper Parmesan cheese Put on a baking sheet or pyrex, 12 sea shells with the shellfish, drizzle over each one a teaspoon of butter or margarine, dash of salt, pepper and 2 Tablespoons of Parmesan cheese. Place in a hot oven for 7 to 8 minutes. Serve inmediately and sprinkle with a litlle bit of lemon juice. The size aprox of a seashell here is 2 inches. Quinoa Pie 1 1|2 cups of cooked quinoa 1 cup cooked and diced chicken 1|2 cup peas, 1 diced tomato 1 medium onion finely chopped 3 tablespoons raisins soaked in water for 10 minutes 5 black olives 1 hard boiled egg 3 fresh eggs 1|2 cup diced ricotta cheese 2 tablespoons paprika oil 1 clove garlic, salt pepper 1|4 cup chopped parsley Parmesan cheese. chicken stock Saute onion, garlic in oil, add chicken, tomato, paprika, salt, pepper, parsley, simmer for a couple of minutes . If it dries add a little of chicken stock. Put quinoa in a bowl, chicken mixture, 3 beaten eggs, mix well and add raisins, olives, cheese, petit pois.Rectify salt and pepper. Grease baking pan and place half of quinoa, drizzle slices of hard boiled egg and cover with rest of quinoa. Cover with rest of quinoa and spatter with Parmesan cheese. Place in hot oven for 15/20 minutes. Serve hot. Picarones (Dessert) 2 tablespoons cooked pumpkin 1 cup milk 2 cups flour 1 tablespoon cornflour 1 tablespoon yeast 1|4 cup warm water 1 tablespoon sugar, salt. oil for frying maple syrup. Dissolve yeast in warm water with a little of sugar and let rest. Mix milk, pumpkin, flour, cornflour, and yeast, stir them for a while and let it rest in a warm place covered with a napkin until doubles its volume.. In a large frying pan put oil (2 cups aprox), until heats hot. With you hands wet with water and salt take about 2 tablespoons of batter and making a hole in the center fry as a doughnut until gets a golden colour. Serve hot 4 to 6 picarones on each plate and drizzle with maple syrup, because if it gets cold is not the same. Pan Fried Squid (Calamares Fritos) 1 lb squids 2 tablespoons oil salt pepper 1 cup flour French fries for accompaniment. Clean squids and cut size of French fries, pour salt and pepper. Pass by flour and fry in hot oil. Serve with French fries and mayonnaise. Sole Ceviche (Ceviche de lenguado) 3 lbs sole fillets 1 1|2 cups lemon juice 2 big onions 1 jalapeno chili cut in small strips 2 tablespoons ground yellow chili pepper 1 teaspoon chopped garlic salt pepper lettuce cooked sweet potatoes. Cut fillets in strips and place in a bowl add lemon juice (15 minutes). Chop onions in thinly slices and wash in cold water. Add this to the fish together with jalapeno, garlic, salt, pepper, yellow chili pepper.
