Easy Fried Fish

Fish fillets, as many as you need to serve.
Coarse grained mustard
Corn meal
Olive oil for frying

Spread fish fillets with grainy mustard on both sides. Dip in cornmeal, covering
completely. Heat skillet and add olive oil. Pan fry fillets in hot pan until
done,
Depending on thickness of fillets this can be as fast as 2 minutes per side. The
fish does not have to be deep fried. Use only enough oil to cover pan bottom.
The fish can be kept in a warm oven until served.
