I don't like sweet pasta sauce at all. Most jarred sauces have some sort of sugar added so when I'm pressed for time, I whip this together. It tastes fresh and is best used on pasta that can "grab onto" the tomatoes and onions. No-Sugar Added, Easy Pasta Sauce 1 Tablespoon olive oil 1 medium onion, chopped 3-4 cloves garlic, minced (I chop mine in a tiny food processor) 3 cans of peeled, diced tomatoes (I use Del Monte Fresh Cut brand), drain 2 of the 3 cans herbs that you like, to taste (I use: basil, lemon-thyme, freshly ground coriander seeds, freshly ground fennel seed) handful of canned black olives (optional) salt pepper In a heated non-stick large skillet, splash in the olive oil. Add the onions and cook till a bit soft. Add garlic and tomatoes. If you're a big fan of black olives, add them now--I don't usually bother to cut them up--they'll add more flavor if cooked in a bit. Add herbs and salt n pepper to taste. Cover and cook over low-medium heat for no more than 5 minutes. Serve over hot pasta.
