Coconut-Raisin Cookies

This was one of my Grandmother's recipes, it makes wonderful, soft cookies.
Sometimes I divide the dough before adding the coconut and raisins and add
chocolate chips and nuts, then you have 2 different cookies from the one dough.
They also freeze very well, just wrap tightly.

1 cup unsalted butter, room temperature
1 tsp. vanilla extract
1 1/2 cups brown sugar, packed
2 eggs, well beaten
2 1/2 cups all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
1 cup each, coconut (I usually add more to the mix) raisins and nuts  a mixture
of walnuts and pecans or macadamia nuts, chopped medium. If making one half
chocolate chip add lots of chips.
About 1/2 cup granulated sugar for top of cookies

Cream butter and vanilla, add brown sugar gradually beating well after each
addition. Add eggs, beating until fluffy-Mix the flour, baking soda and salt,
add to the sugar mixture gradually mixing well after each addition. Add the
nuts. If dividing the dough for 2 different cookies, do so now. Then, add the
raisins and coconut to one half and the chocolate chips to the other half. Mix
well. Drop by Tbsp onto ungreased cookie sheet (I line my cookie sheets with
parchment paper)
I also roll the dough into balls but either way is okay. Dip a glass into
granulated sugar then mash the cookies a little. Bake 375� for about 8-10
minutes until light golden brown.  Makes about 5 dozen.


Apple Cake

This is wonderfully moist:

2 cups granulated sugar
1 1/4 cup vegetable oil
2 eggs
3 cups all-purpose flour
1 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
3 cups, peeled apples, diced small
1 cup chopped pecans or walnuts
1 cup raisins

Preheat oven to 350 F. Mix all ingredients with your hands Do not try to use a
mixer, the dough is stiff and will strain the mixer. Bake in an ungreased 9x13
pan for about 1 hour or until tested done.  Cool.


Banana Bread

This is a recipe I developed to find the best banana bread .

1/2 cup unsalted butter, room temp.
1 cup granulated sugar
2 eggs
Zest and 1/2 cup juice from an orange
4 very ripe bananas, coarsely mashed
2 cups all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. nutmeg
1/4 tsp. ground ginger
1 tsp. banana extract
1 cup chopped pecans  (I use some of the nuts to sprinkle in the bottom of the
loaf pan, this keeps the bread from sticking)

Preheat oven to 350 F.  Greases and flour a loaf pan. In a large bowl, using an
electric mixer, cream butter and sugar. Add eggs and beat until fluffy. Add
orange zest and juice and mix well. Add bananas and extract, then the dry
ingredients. Mix just to combine the ingredients. Pour into prepared pan and
bake 1 hour or until tested done. Cool on a rack 10 minutes the turn the bread
out to cool completely.  These can also be baked as muffins.  Jan
