Chocolate Nut Biscotti
Orange Chocolate Biscotti

Does anyone have Biscotti recipes?  I'm interested in any and all: quick
biscotti, chocolate, mango, traditional - anything you got!

Chocolate Nut Biscotti

2 cups all purpose flour
1/2 tsp ground cinnamon
1/2 tsp baking soda
1/2 tsp baking powder
1/2 cup butter or margarine
1 cup granulated sugar
1 large egg
1 cup M&Ms semi sweet or milk chocolate baking bits
3/4 cup chopped nuts

Preheat oven to 350 F
In a bowl combine flour, cinnamon, baking soda and baking powder; set aside. In
a medium bowl cream together butter and sugar; add egg and mix well. Blend in
flour mixture. Stir in baking bits and nuts. Divide dough in half. With floured
hands, shape each portion of dough into a 2 X12 inch log and place on a greased
cookie sheet about 4 inches apart. Bake 25 to 27 minutes or until firm. Remove
pan from oven and cool logs for 30 to 40 minutes. Slice each log into 12 pieces,
and place cut side down on cookie sheet. Bake for 10 more minutes. For a softer
biscotti, omit second baking. Cool biscotti completely on rack before serving.
Makes 24 pieces.



Orange Chocolate Biscotti

3 cups flour
2/3 cup sugar
1/3 cup brown sugar
1/4 tsp salt
2 tsp baking powder
4 oz semi-sweet chocolate, melted
2 Tbsp grated orange zest
3 Tbsp orange juice
2 tsp vanilla
3 egg whites
4 oz white chocolate, chopped



Combine flour, sugars, salt and baking powder in a large bowl and mix well. Stir
in melted chocolate, orange zest and juice, vanilla, egg whites and white
chocolate and continue mixing. Knead dough with your hands until mixed
thoroughly, dough will be stiff. Separate dough into 4 equal pieces and roll out
to form 4 log shapes that are about 2 inches thick and 12 inches long. Preheat
oven to 350F. Place logs on a lightly greased baking sheet and bake for 20
minutes. Allow to cool completely. Reduce heat of oven to 300F. Slice logs into
1/2-inch pieces and lay them on their sides. Return to the oven for 9 more
minutes. Turn over to other side and cook an additional 9 minutes. Cool.
