Fast and Fresh Tomato Pasta Toss Makes: 4 servings
2 tablespoons olive oil 4 tablespoons butter 1 small onion, minced 1 garlic clove, minced 1-1/2 pounds plum tomatoes, peeled, seeded, chunked 1 teaspoon sugar salt and pepper to taste 4 tablespoons chopped fresh parsley 2 tablespoons chopped fresh tarragon or 1 tablespoon fresh chopped thyme freshly cooked pasta torn basil leaves In a heavy saucepan, heat the olive oil and butter together. Sautee the onion until almost tender. Toss in the garlic and continue cooking until onion is tender. Stir in the chopped tomatoes, sugar, and salt and pepper to taste. Cook, stirring, until the tomatoes are hot. Toss in the parsley and tarragon or thyme. Toss the tomato mixture with the cooked pasta. Gently toss in the basil.
