Down East Cornbread
2 c. cornmeal
1/4 c. sugar
2 tbsp flour
1 tbsp baking powder
1 tsp baking soda
1 tsp salt
2 c. buttermilk
or 1 c. milk plus 1 c. sour cream
1/4 c. vegetable oil
1 large egg
Preheat oven to dg425. Grease 9-inch square baking pan. In large bowl
combine first six ingredients. In medium bowl whisk buttermilk, oil
and egg until blended. Stir into cornmeal mixture just until
moistened.
Pour batter into prepared pan. Bake 20-25 minutes or until golden and
tests clean. Cut into 9 squares.
Calories per serving 225.
