Pina Colada Cheesecake

Ingrediants:

  1 1/2           cups  coconut cookies crushed -- into crumbs

  3        tablespoons  butter -- melted

  2               cups  sour cream

  1                can  crushed pineapple -- well-drained

  3           packages  cream cheese -- (8 oz.) softened

  3        tablespoons  dark rum (substitute rum flavoring or

extract)

  3              large  eggs

  2          teaspoons  coconut extract

  1                cup  sugar

                        -----TOPPING-----

  1                can  crushed pineapple -- undraine d

  1         tablespoon  cornstarch

  1         tablespoon  dark rum (substitute rum extract)

  1         tablespoon  sugar

 

Directions:

Combine cookie crumbs and margarine. Press on bottom and sides of 9

inch springform pan. Beat cream cheese, eggs and sugar. Stir in sour

cream, drained pineapple, rum and coconut extract. Pour into crust.

Bake in 375 degree oven for 50 to 55 minutes. Cool and chill. Spread

topping over cheese cake.

 

Topping: Combine all ingredients in a saucepan. cook, stirring until

boils and thickens. Cool.   NOte:  If you do not use rum, you can

substitute rum flavoring, but its not quite the same.
