~OLD FASHIONED~ STRAWBERRY COBBLER

3 cup All purpose Flour
1/2 tsp. salt
1 cup shortening
5-7 Tbsp cold water
1 qt Strawberries, cut in 1/2
2 cup water
1-1/2 cup sugar
1/2 cup  butter
1/2 tsp vanilla
1/8 tsp. salt

Low Down:  Use a sugar substitute such as 
SPLENDA, and a butter substitute such as 
Smart Balance here.

In the ingredient list order indicated, Mix flour 
& salt; cut in shortening until mixt resembles 
coarse crumbs. 
Sprinkle water over mix 1 Tbsp. at a time mixing 
with a fork.  Shape into a ball.  On lightly floured 
board roll out 1/3 of the dough.  Fit into a greased 
9 " square pan.  Roll out another 1/3 of the dough 
cut into 2-3 " strips.Set aside.  In a saucepan,
combine strawberries, water, sugar, butter, vanilla 
& salt; bring to a boil; add dough strips,Stirring 
constantly cook for 5 mins.Pour strawberry mix 
into dough lined pan.Roll last 1/3 of the dough
into a 9 " square. Place over strawberries forming 
a top crust,cut a few slashes to vent, flute edges. 
Bake at 400 °F for 35-40 min until crust
is golden brown.
