Au Gratin Peas 
 
1 small onion, chopped
2 Tbsp. butter
2 Tbsp. flour
1 cup milk
3 cups frozen peas, thawed
1/2 cup seasoned bread crumbs
2 cups cheddar cheese, shredded

Melt butter in a skillet and add onion and saute until tender.
Sprinkle with flour and stir until thickened. Add cold milk and stir
until mixture thickens. You may need to add more milk or four to
achieve desired consistency. Place peas in a lightly greased baking
dish. Pour milk mixture over peas. Sprinkle with bread crumbs and
cheese and bake at 350 degrees for 35 minutes.
