>Maple Pecan Cornbread with Maple Butter
>Cornbread Ingredients:
>1 cup cornmeal
>1 cup all-purpose flour
>1 teaspoon baking powder
>1 teaspoon baking soda
>1/2 teaspoon salt
>3 large eggs
>3 tablespoons LAND O LAKES® Butter, softened
>2 tablespoons firmly packed brown sugar
>1/2 cup buttermilk*
>1/4 cup pure maple syrup or maple-flavored syrup
>1 teaspoon maple flavoring
>3/4 cup chopped pecans, toasted
>
>Maple Butter Ingredients:
>1/2 cup LAND O LAKES® Butter, softened
>1 tablespoon pure maple syrup or maple-flavored syrup
>1 teaspoon maple flavoring
>
>Heat oven to 350°F.
>Combine cornmeal, flour, baking powder, baking soda and salt in small bowl.
>Combine eggs, 3 tablespoons butter and brown 
>sugar in large mixer bowl. Beat at medium speed 
>until well mixed (1 to 2 minutes).
>Add buttermilk, 1/4 cup maple syrup and 1 
>teaspoon maple flavoring. Continue beating until 
>well mixed (2 to 3 minutes). Reduce speed to 
>low; add flour mixture. Beat, scraping bowl 
>often, until well mixed (1 to 2 minutes). Stir in pecans by hand.
>Spoon into greased 8-inch square baking pan. 
>Bake for 25 to 30 minutes or until toothpick 
>inserted in center comes out clean.
>Meanwhile, combine all maple butter ingredients 
>in small mixer bowl. Beat at medium speed until 
>fluffy (2 to 3 minutes). Serve with warm cornbread.
