Molasses Ginger Cookies

Makes about 50 cookies.
1 tablespoon ground ginger
½ teaspoon ground pepper
½ teaspoon ground allspice
½ teaspoon salt
2½ cups all-purpose flour
2 teaspoons baking soda
¾ cup butter, room temperature
½ cup packed C&H Golden Brown Sugar
6 tablespoons molasses
1 egg
½ cup C&H White Granulated Sugar
Mix spices, salt, flour and baking soda in a medium bowl. In a separate
bowl, cream butter and brown sugar until light and fluffy. Beat in
molasses and egg. Slowly beat in flour mixture until just combined. Turn
out onto plastic wrap, wrap and freeze for 20 minutes. Scoop dough by
the teaspoon. Roll into ball, then roll in granulated sugar. Place on
baking sheets lined with parchment paper. Flatten. Bake at 350 degrees
for 12-15 minutes or until brown, rotating parchment sheets after 7
minutes. Cool.
