Banana Bread Cookies These are soft, chewy cookies that taste just like homemade banana bread! The drizzle is optional. makes 18 servings Ingredients: 1 cup white sugar 1 cup butter flavored shortening 2 eggs 1 teaspoon vanilla extract 1 banana, peeled and mashed 2 cups all-purpose flour 1 teaspoon baking soda 1/2 teaspoon salt 3 tablespoons butter 1/3 cup confectioners' sugar for decoration 1 tablespoon milk 1 teaspoon vanilla extract Directions: 1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease baking sheets. 2. Cream the e shortening with the white sugar. Add the eggs, vanilla and banana. 3. In a separate bowl. Combine the flour, baking soda and salt. Add to the shortening mixture and mix to combine. Batter will be sticky. Drop by spoonful onto the prepared baking sheet. 4. Bake at 350 degrees F (175 degrees C) for 10 to 15 minutes or until light brown. Remove to cooling racks and drizzle with frosting . 5. To Make Frosting: Combine the butter, confectioners' sugar, milk and vanilla. Mix until smooth and a nice drizzly consistency has been reached. Use as much confectioners' sugar as necessary.
