Muesli in the Zone
People who enjoy starting the day with a bowl of cold cereal need to
rethink their breakfast routine if they want to enter the Zone — most
commercially prepared breakfast cereals, no matter how
vitamin-fortified, are simply too high on the Glycemic Index to qualify
as Zone-appropriate.
But here's good news for cereal lovers: Zone Community Moderator Jen
recently posted this recipe for a delicious Zoned muesli on the Message
Boards. She recommends making a double batch ahead of time, leaving out
the nuts, and storing it in the fridge so you have breakfast ready for
two days in a row. Stir in the nuts just before eating. Enjoy!
Zone Cold Muesli
Ingredients
1/2 cup low-fat cottage cheese
7 grams protein powder, check label
1 ounce rolled oats
3 canned apricots, chopped
1 tablespoon slivered almonds
Instructions
Put ingredients in bowl, stir, and eat!
You can also easily alter this recipe by:
Adding 1 block of fresh fruit instead of the apricots
Increasing the cottage cheese to 3/4 cup and omitting the protein powder
Sprinkling on spices to taste: cinnamon, ginger, or even cocoa powder
