This is sooooo yummy - don't know if it's the 
whipping cream or the bourbon, but I think it's 
the bourbon -  somehow I manage to overfill 
the measuring spoon when doling out the 
bourbon. 
Holiday Yams
6 pounds sweet potatoes
3 eggs
1/2 c. sugar
1/2 c. butter, melted
1/2 c. whipping cream
2 Tbs. bourbon
1 tsp. vanilla extract
Pecan topping:
1/2 c. butter, melted
1 c. chopped pecans
1 c. brown sugar
1 c. flour
Preheat oven to 375 degrees.  Bake sweet potatoes 
on an oven rack for 45 minutes, or until soft.  You 
will reduce the oven temperature to 350 degrees 
(or 325 for a glass casserole) when baking the actual 
dish. Cool slight and then halve and scoop out pulp. 
Mash pulp, using electric mixer if desired,  then add
eggs, sugar, butter, cream, bourbon, and vanilla. Stir 
well to combine - or use a mixer to combine. Pour 
into greased casserole (round two quart or 9 x 13 - 
either works well). To prepare topping:combine all 
ingredients and sprinkle over yams. Bake casserole,
uncovered, 40 minutes, or until heated through and 
top is lightly browned. Makes 8 to 12 servings.
