Schenkelés - French Xmas Cookies
1 cup finely ground, blanched almonds
2 cups confectioner's sugar
4 large eggs
1/2 cup butter, melted and warm
2 Tablespoons brandy
4 cups flour
For dusting: 3/4 cup sugar mixed with 1/2 teaspoon of cinnamon
Use peanut oil for frying and heat the oil to 375°F.
Combine the almonds and the sugar. 
Add the eggs, butter and brandy and beat until the mixture is smooth. 
Gradually stir in the flour and knead on a floured surface until smooth
and it no longer sticks to your fingers. 
Roll out to a thickness of 1/2-inch. Cut into strips about 2 inches long
and 1/4 to 1/2 inch wide. 
Cook the strips about 4-6 minutes in the fryer and drain on paper
towels. 
Arrange the strips on a serving platter and sprinkle with the cinnamon
sugar. Serve cold.
